iOS is the operating system on the iPhone. Its privacy features include App Tracking Transparency, which makes apps ask before tracking you, plus on-device processing for Siri and an optional Lockdown Mode for people at high risk of targeted attacks.

Our take
Out of the box iOS leaks less than a stock Google Android phone, because tracking is opt-in and Apple does not run the advertising machine Google builds on your data. The catch is that it is entirely closed, so the privacy rests on Apple’s promises rather than anything you can inspect, and it stays a US company that answers to legal demands. A solid pragmatic choice for most people. The maximalist move is a de-Googled Android like GrapheneOS, which trades Apple’s word for code you can verify.
